We stayed the night at a beautiful CampersCard location right outside of the greater Salt Lake City area in South Weber, Utah. Nestled in the Wasatch mountain range, we were greeted with an amazing view to begin our stay. Riverside RV Resort takes its name from being located directly next to the Weber River and offers campers a relaxing stroll along its banks with a manicured and level trail. The resort is impeccably clean and offers many convenient amenities including clean showers as well as 24-hour self-service laundry facilities. There are basketball and pickleball courts, a pool area to cool off and unwind after a long day of traveling, and a fenced area for your fur babies to stretch their legs off leash. Large pull-through spots with full hook-up service make this an easy decision for travelers to park for the night, or longer.
The Salt Lake City area offers many forms of entertainment and destinations to visit. Just a short drive from the Riverside RV Resort is Antelope Island State Park, which is adjacent to the Great Salt Lake. It's easy to spend an entire day in this extremely diverse ecosystem. The visitor center is packed with tons of information and beautiful nature-inspired art. Visitors can hike, have a meal at the island restaurant, and see roaming wildlife such as bison, long-horn sheep, and much more. Make sure to take advantage of this wonderful CampersCard campground and all of the activities and adventures that surround it.

Sweet onions are Utah's state vegetable. Check out this easy recipe for our Saddle-Up Sweet Onion Soup! Simple to make, full of flavor, perfect to feed a crowd, and stores easily for leftovers on the go!
Saddle-Up Sweet Onion Soup
(4 servings)
Ingredients
- 2 large sweet Vidalia onions, sliced thin
- 1 stick butter (1/2 C)
- 1 TBL flour
- 4 C beef broth
- Mountain Magic Seasoning (to taste)
- 1 tsp sugar
- French Bread, 4 thick slices, toasted
- 1 C shredded Swiss cheese (or your favorite cheese)
- Parsley, chopped (optional to garnish)
Instructions
1.Prep all ingredients: slice onions, slice & toast bread, shred cheese, chop parsley
2.Melt the butter in a large pot over medium-low heat
3.Add the sliced onions and sauté in the butter until they are nice and tender and beginning to brown on the edges
4.Add the flour and continue cooking and stirring for 2-3 minutes
5.Add the beef broth, sugar, and Mountain Magic seasoning while stirring
6.Turn up the temperature to medium heat and simmer for another 10-15 minutes
7.Place 4 ovenproof ramekins or soup bowls onto a sheet pan
8.Ladle the soup into the bowls, dividing evenly into 4 servings
9.Place one thick slice of toasted French bread onto the top of each bowl of soup
10.Sprinkle shredded cheese generously over the top of each slice of bread
11.Place in oven at 350 degrees approx. 10 minutes or until cheese melts
12.Garnish with parsley and serve warm. Soooo good.
Fun & Simple Recipe Camping Tips

If cooking outdoors, this recipe can be done over campfire grates in a large stock pot. Then just ladle into bowls, top with grilled bread, and sprinkle with cheese. No oven or stovetop required!

Note that it's important not to skip toasting/grilling the bread otherwise it will become super soggy, super quickly!

To save time at the campsite, pre-prep your ingredients at home before hitting the road and put your sliced onions, chopped parsley, toasted bread, & shredded cheese in baggies to bring ingredients that are ready to go!

Try adding cooked and seasoned ground beef or ground bison! Mmmmm good.
